‘Custom’ Starch May Be the Answer to Type 2 Diabetes

A new study in Carbohydrate Polymers finds that “Altering its [starch’s] digestion, e.g.increasing the proportions of slowly digestible starch (SDS) and resistant starch (RS), would revolutionize starch utility in addressing a number of health issues related to glucose absorption, glycemic index and colon health.” By embedding “guest” molecules in raw potato starch, SDS levels were reduced by 24% in about 2 hours. The research suggests the importance of novel starch-based stable carriers that induce tailored glucose release rates and transport other beneficial compounds in the body.
